I first tasted the mint-tomato combination when my neighbor made a salad with grapes, tomatoes and mint. It seems an odd combination, but when you realize that a tomato is technically a fruit, it's not such a stretch. Balsamic vinegar compliments the sweetness of the tomatoes. Just a drizzle of olive oil and a whisper of kosher salt and fresh black pepper is all the seasoning this salad needs.
